Tasty Tuesday: Crunchy Coconut Chicken


Mister and I meal plan. It goes something like this: sunday we sit down together for weekly planning. We look at our pinterest accounts, *yes mister has a pinterest and we find the best looking food and make a list of ingredients we need. Last week mister planned all the meals, and this is one he wanted. It's so easy and incredibly delicious. I found the recipe here. The women created it as healthy better tasting alternative to chicken nuggets for her kids.


Crunchy Coconut Chicken
  • 1 chicken breast, cut into 2 inch bites
  • 2 cups corn flakes, crushed
  • 1/2 cup flaked coconut
  • 1/2 tsp ground ginger (you certainly add more for a bit more heat)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1 tblsp milk
Preheat oven to 375 degrees. Spray a baking sheet with cooking spray. In a shallow bowl mix corn flakes, coconut, ginger, salt, and pepper. In another shallow bowl beat egg and milk. Dip the chicken into the egg mixture then into the corn flake mixture. Press to ensure the corn flakes stick. Place on a baking sheet and bake for 12-14 minutes. Serve with a honey mustard dipping sauce.
